Simply Tomatoes

Ingredients:
2 large tomatoes or 6 Roma type tomatoes, fully ripe and with skins on
3 oz. salted mozzarella cheese, cubed
2 Tablespoons chopped fresh basil
1 tablespoon each, olive oil and butter
dash of salt and pepper

Directions:
Use a non-stick medium size frying pan to melt butter and oil. Chop tomatoes roughly and put in pan. Stir and simmer until much of the liquid evaporates. Add basil, cheese and salt and pepper. Stir slightly until cheese starts to melt. Pour into a bowl and eat with plenty of Italian bread. This serves one tomato lover adequately; double to serve two, etc.
