Tomato Appetizer

Ingredients:
2 large ripe tomatoes, seeded and chopped
Quarter cup fresh garden basil chopped
4 strips bacon
3 large shallots
1 French baguette
Olive oil

Directions:
Slice baguette in rounds about a quarter inch thick. Brush both sides of slices with olive. Bake in hot oven (400 degrees) until browned, about 8 minutes. Set aside. Fry bacon slices until very crisp over medium heat. Remove bacon slices. Allow to cool and then crumble them. Set aside. Chop shallots, not too finely, and sauté them in the bacon grease until soft. Toss shallot mixture with chopped tomatoes and fresh basil. Spoon tomato mixture onto toasted baguette rounds, and sprinkle with crumbled bacon. Make lots….they go fast.
