Veggie Skillet

Submitted By: Christine Wells

Ingredients:
1 large zucchini, sliced thin
1 large yellow squash, sliced thin
1 large onion, sliced thin
1 broccoli head, cut in small pieces
1/2 cauliflower, cut in small pieces
1 bell pepper (any color), sliced in thin strips
2 large tomatoes, sliced and cut in half
1 clove garlic
1 Tbs. Worchester Sauce
2 Tbs. Sesame Oil
Salt, pepper & seasonings to taste

Directions:
Heat wok or deep skillet; add Sesame oil to hot wok. Add broccoli, cauliflower and garlic. Sauté for several minutes. Add zucchini, squash, onions, peppers, Worchester Sauce and seasonings. Sauté until onions turn clear. Add tomatoes and sauté until tomatoes are heated. This should serve 4 easily, maybe 6. If you are a carnivore, you can add sautéed strips of chicken or beef when you add the first veggies. This dish is VERY good the second day as leftovers!

Gardeners' Quotes

"Making a connection to a woodland garden isn’t dependent on a grand space or budget. My first garden was on an eighth-acre urban lot in Newark, Delaware…planted the tiny space with woodland ferns, wildflowers, and shrubs..," Rick Darke, The American Woodland Garden-Capturing the Spirit of the Deciduous Forest.
