Tomato and Basil Pie

Ingredients:
1 pie shell (homemade or purchased)
2-3 slicing tomatoes
1 Vidalia onion, halved and then sliced
1 cup shredded mozzarella
1/4-cup fresh basil leaves
1 cup Duke's mayonnaise
1 egg
1 tsp. Italian seasoning

Directions:
Slice tomatoes and lay on paper towels to drain. Prebake pie shell for 10 minutes. Mix Italian seasonings into mayonnaise, beat in one egg by hand. Paint inside of pie shell with mayonnaise mixture. Layer tomatoes, sliced onions, basil, cheese and mayo mixture, repeating twice. End with mayo mixture topped with leftover cheese. Bake at 350 degrees for 30-40 minutes, until lightly browned and bubbly. Serve with fresh salad and fruit
