| Zucchini Casserole |

Submitted By: Denise Schreiber Ingredients: 1 1/4 cup saltine coarse cracker crumbs 1/4 cup melted butter 1 lb or 2 1/2 cups grated zucchini 3/4 cup shredded sharp cheddar cheese 1 egg lightly beaten 1/2 small onion finely chopped 1 clove garlic minced Preheat oven to 325. In a small bowl combine cracker crumbs and butter reserving 1/4 cup of cracker mixture for topping. In a medium bowl stir together the rest of the ingredients. Put into an 8" baking dish. Sprinkle on reserve crumbs. Bake for 1 hr. |
