Zucchini Parmesan

INGREDIENTS:
4 medium Zucchini
1 medium Onion
3 cloves garlic
2 medium baking Potatoes
2 Roma Tomatoes or 1 medium Tomato
3 oz. Virgin Olive Oil
1 Oz. Water
4 sprigs fresh Basil or 1/2 tsp. a pinch of red pepper flakes
Salt and pepper to taste
Sprinkling of Parmesan Cheese

Rinse Zucchini; cut 1/8th inch off ends and discard. Slice Zucchini into 1-inch pieces. Peel and quarter Onion peel and dice Garlic. Peel potatoes. Half, then half again and slice into 1 inch pieces. Cut Tomato(s), slice then dice. Toss with all of the other ingredients, except Olive Oil and water in a medium Saucepan. Top with Olive Oil and Water, cover over medium heat for 10 minutes. Stir well, lower heat and simmer about 30 minutes, stirring once or twice, until potatoes are tender.
