Submitted by: Dee Wydnyk INGREDIENTS: Rinse Zucchini; cut 1/8th inch off ends and discard. Slice Zucchini into 1-inch pieces. Peel and quarter Onion peel and dice Garlic. Peel potatoes. Half, then half again and slice into 1 inch pieces. Cut Tomato(s), slice then dice. Toss with all of the other ingredients, except Olive Oil and water in a medium Saucepan. Top with Olive Oil and Water, cover over medium heat for 10 minutes. Stir well, lower heat and simmer about 30 minutes, stirring once or twice, until potatoes are tender. |
