Fresh Tomato Salsa

Ingredients:
1 1/2 pounds plum tomatoes (6 - 8), cored, halved and seeded
1/2 medium red onion, minced
1 jalapeno pepper, ribs and seeds removed for less heat, if desired, minced
1 garlic clove, minced
1/2 cup chopped fresh cilantro
1 tablespoons fresh lime juice (from 1 lime)
Sea salt
Tortilla chips, for serving

Chop tomatoes into 1/4-inch pieces. Place in medium bowl. Add the onion, jalapeno, garlic, cilantro, and lime juice. Mix to combine. Let stand at least 15 minutes to develop flavors. Can be kept at room temperature for 2 hours and stored in the refrigerator in an airtight container for up to 3 days.

Makes about 3 1/2 cups.
