Baked Okra and Ground Beef Casserole Here's a good do-ahead recipe that is also great served cold. 1 clove garlic, chopped 9 Tb butter 3 Tb oil 1 cup chopped onions 2 lb ground beef or lamb 2 cups crushed tomatoes salt ¼ tsp cayenne pepper 1 tsp dill 2 eggs 1 cup grated Parmesan cheese 2 lb okra, washed, dried, and stemmed Fresh ground pepper ½ cup flour 3 cups milk 4 egg yolks - Heat 1 Tb butter and 1 Tb oil. Sauté onions until soft and lightly browned.
- Add garlic and meat and cook until the meat is just cooked through.
- Drain fat. Add tomatoes, 1 tsp salt, cayenne pepper, and dill, and cook over moderately high heat for 4-5 min to thicken. Remove and place in a bowl and allow to cool slightly.
- Beat 2 eggs. When the mixture has cooled, stir in eggs and ½ cup cheese, set aside.
- Wash, dry, and stem okra. Cut into ¼-inch slices.
- Heat 2 Tb butter and 2 Tb oil and sauté okra, stirring constantly, until lightly browned. About 10 min. Season with salt and pepper, set aside.
- Melt 6 Tb of the butter, stir in the flour, and cook for 2-3 min. Whisk in milk, bring to a boil, reduce heat, and simmer for 10 min.
- Strain through a sieve if sauce is thick or lumpy.
- Beat in remaining cheese and 4 egg yolks. Season with salt and pepper.
- Butter a 9 x 13-inch baking dish.
- Spread half the meat mixture in the dish, cover with the sautéed okra, and top with the remaining meat.
- Cover with the sauce.
- Bake in a preheated 350°F oven for 45-50 min.
- Serve hot or cold in squares. Serves 8-10.
