Baked Okra and Ground Beef Casserole

Here's a good do-ahead recipe that is also great served cold.

1 clove garlic, chopped
9 Tb butter
3 Tb oil
1 cup chopped onions
2 lb ground beef or lamb
2 cups crushed tomatoes
salt
¼ tsp cayenne pepper
1 tsp dill
2 eggs
1 cup grated Parmesan cheese
2 lb okra, washed, dried, and stemmed
Fresh ground pepper
½ cup flour
3 cups milk
4 egg yolks

  1. Heat 1 Tb butter and 1 Tb oil. Sauté onions until soft and lightly browned.
  2. Add garlic and meat and cook until the meat is just cooked through.
  3. Drain fat. Add tomatoes, 1 tsp salt, cayenne pepper, and dill, and cook over moderately high heat for 4-5 min to thicken. Remove and place in a bowl and allow to cool slightly.
  4. Beat 2 eggs. When the mixture has cooled, stir in eggs and ½ cup cheese, set aside.
  5. Wash, dry, and stem okra. Cut into ¼-inch slices.
  6. Heat 2 Tb butter and 2 Tb oil and sauté okra, stirring constantly, until lightly browned. About 10 min. Season with salt and pepper, set aside.
  7. Melt 6 Tb of the butter, stir in the flour, and cook for 2-3 min. Whisk in milk, bring to a boil, reduce heat, and simmer for 10 min.
  8. Strain through a sieve if sauce is thick or lumpy.
  9. Beat in remaining cheese and 4 egg yolks. Season with salt and pepper.
  10. Butter a 9 x 13-inch baking dish.
  11. Spread half the meat mixture in the dish, cover with the sautéed okra, and top with the remaining meat.
  12. Cover with the sauce.
  13. Bake in a preheated 350°F oven for 45-50 min.
  14. Serve hot or cold in squares. Serves 8-10.
