Pan-Fried Okra

Pan-Fried Okra

1 lb. young okra, pref. 1-2 inches long
2 eggs
½ cup milk
1 tsp. salt
vegetable oil
1 cup crushed cracker crumbs
salt and fresh ground pepper

  1. Wash and dry okra, remove stems.
  2. Beat eggs, milk and salt together.
  3. Heat 1 inch of vegetable oil in a saucepan.
  4. Dip okra into egg mixture, then into crumbs, coating thoroughly and evenly.
  5. Fry in the hot oil until crisp, lightly browned, and just tender.
  6. Drain on paper towels and serve sprinkled with salt and pepper. Serves 4.
