Carrot Cake

Ingredients:
1 cup sugar
1 cup oil
3 eggs
1 1/3 tsp. cinnamon
1 cup flour
1/3 cup cornmeal
1 1/3 tsp. baking powder
1 1/3 tsp. baking soda
1/2 tsp salt
2 generous cups grated carrots
1/2 cup pecans

Cream sugar, oil and eggs together. Then add cinnamon, flour, cornmeal, baking powder, soda and salt. Stir in the carrots and nuts.  Pour into a greased and floured 9 x 13 inch baking pan and bake at 300* for 1 hour. Cool. Top with cream cheese frosting.

Cream Cheese Frosting
8 ounces cream cheese, softened
4 tablespoons butter, softened
2 1/2 cups powdered sugar
2 teaspoons vanilla

Mix all ingredients until smooth. Spread over carrot cake.
